This fresh Summer Pasta Salad is loaded with veggies. It's the perfect weekday lunch or side dish for a BBQ!

Ingredients
  

  • 12 oz box of tricolor pasta
  • ½ cup chopped onions
  • 1 head cauliflower
  • 1 red bell pepper chopped
  • ½ cup light mayo
  • 1 tbsp rice vinegar
  • 1 tbsp dijon mustard
  • salt & pepper to taste

Instructions
 

  • Pre-heat your oven to 350° F.
  • Slice your cauliflower into bite size pieces. Spray a baking tray with non-stick cooking spray.
  • Lay out your cauliflower and place in the oven for 45 minutes.
  • While your cauliflower is roasting, cook the pasta.
  • In a small bowl, add the mayo, rice vinegar and dijon mustard. Mix well.
  • Once your cauliflower is finished, add it into the pasta along with your peppers and onions. Top off with your dressing and mix well!
  • Add salt and pepper to taste.
